Start your day on a wholesome note with our Hearty and Healthy Blueberry Breakfast Cookies. Loaded with nutritious ingredients like hemp seeds, dried fruit, and fiber-rich oat flour, these cookies are a healthy way to enjoy a sweet, blueberry-filled treat.




  • 1 egg
  • 4 tablespoons olive oil
  • 5 tablespoons honey
  • 4 tablespoons almond butter
  • ¼ cup apple sauce
  • 1 cup cannellini beans, rinsed
  • 1½ cups oat flour (rolled oats blended in the blender until a flour forms)
  • 1½ cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1⁄3 cup hemp seeds
  • Pinch of cardamom, optional
  • 1⁄3 cup dried cherries
  • 1⁄3 cup raisins or currants
  • 1 cup California Giant blueberries


      • Start by preheating the oven to 350F.
      • Whisk together the wet ingredients - egg, olive oil, honey, almond butter, applesauce, and set aside.
      • Now mash the beans into a paste and stir into the wet ingredients.
      • In a separate bowl, mix together the dry ingredients - oat flour, oats, baking powder, baking soda, sea salt, spices, hemp seeds, and dried fruit.
      • Slowly add the dry ingredients into the wet. Mix well.
      • Now gently fold the blueberries into the mixture. Roll into large balls - about 4 tbsp in size - place on a parchment lined baking tray and bake for 15-20 minutes or until the tops of the cookies are golden brown !and cooked though. Enjoy!
