Bright, zesty, and bursting with sweet summer fruit, these Lemon Berry Poppy Seed Muffins deliver bakery-quality taste with a wonderfully wholesome profile. Made with a blend of white whole wheat flour and creamy Greek yogurt, each bite offers a soft, tender crumb studded with nutty poppy seeds and fresh, juicy California Giant blueberries and raspberries.

INGREDIENTS

  • 1.75 cups white whole wheat flour (weighed 240g)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1.5 tablespoon poppy seeds
  • ¼ teaspoon fine sea salt
  • ¾ cup plain greek yogurt or skyr (0%, 2% of full-fat), room temperature
  • 2/3 cup granulated sugar
  • 5 tablespoons unsalted butter (melted and cooled)
  • 2 tablespoons avocado oil
  • 2 large eggs, room temperature
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon emulsion (or lemon extract)
  • ¼ teaspoon vanilla extract
  • Zest of 2 lemons
  • 2/3 cup fresh California Giant blueberries
  • ½ cup fresh California Giant raspberries

DIRECTIONS

      • Preheat oven to 425ºF and line a 12-cup muffin pan with nonstick liners.
      • In a medium bowl, combine flour, baking powder, baking soda, salt and poppy seeds; set aside.
      • In a large bowl whisk together greek yogurt, sugar, melted butter and oil. Add in eggs, lemon juice, lemon emulsion and vanilla extract; whisk until combined.
      • Add in almost all of the flour mixture, and slowly start to combine. While there are still dry spots in the batter, add the berries, lemon zest and remaining flour; gently fold until fully combined.
      • Evenly distribute the batter into the muffin liners. Bake for 5 minutes at 425ºF then decrease the oven temperature to 350ºF and continue baking for another 10-15 minutes, OR until inserted toothpick comes out clean (no wet batter). Tops should be lightly golden brown around edges.
      • Allow muffins to cool in pan for 5 minutes before transferring to a wire rack.
