This Mixed Berry Cowboy Caviar Salad is vibrant, fresh, and perfect for entertaining!

 

 

INGREDIENTS

  • ½ cup tomatoes, halved
  • ½ yellow bell pepper, roughly chopped
  • ½ red bell pepper, roughly chopped
  • 1 (15oz) can black beans
  • ⅓ cup California Giant Berries blackberries, chopped
  • ⅓ cup California Giant Berries strawberries, chopped
  • 1 shallot, diced
  • 1 avocado, diced
  • ½ cup corn, canned or fresh
  • ½ teaspoon cumin powder
  • Pinch of chili flakes
  • Zest and juice of 1 lime
  • Handful of fresh cilantro
  • Handful fresh basil
  • Sea salt

DIRECTIONS

  • Mix all the ingredients into a large bowl. Serve and enjoy!.
