These PB&J Bites are a delicious and convenient spin on a childhood classic. Use these as a quick grab-and-go breakfast or snack for lasting energy.

PB&J Energy Bites

INGREDIENTS

  • 1 cup Cal Giant strawberries
  • 2 cups rolled oats
  • 2 cups flaked coconut
  • 3/4 cup peanut butter
  • 1/4 cup honey
  • 1/4 cup chia seeds
  • 1/2 cup dark chocolate chips
  • 1/2 teaspoon salt 1/2 teaspoon vanilla

DIRECTIONS

      • In a food processor, pulse the oats and coconut until ground.
      • Add strawberries, peanut butter, honey, chia seeds, dark chocolate chips, salt and vanilla.
      • Pulse until strawberries are cut into smaller pieces.
      • Roll into balls. Freeze or refrigerate until solid.
