Pumpkin + Blackberry Cake Bars

These Pumpkin + Blackberry Cake Bars are as delicious as they are unique! A blackberry filled cake layer is brilliantly topped with a creamy pumpkin pie flavored layer and baked to make tasty, chewy bars that will be devoured in minutes.


    For Pumpkin Pie Layer:

  • 2 eggs
  • 8 oz cream cheese, softened
  • 1 cup pumpkin puree
  • 1 box powdered sugar (1 lb)
  • 2 tablespoon pumpkin spice (or cinnamon)
  • For Cake Layer:

  • 1 stick butter, melted
  • 1 box vanilla cake
  • 2 eggs
  • 40 California Giant blackberries


      • Preheat oven to 350 degrees.
      • In a large mixing bowl, mix together butter, cake mix, blackberries, and eggs until well incorporated.
      • Spray pan with nonstick spray. Press cake mixture into bottom of pan.
      • In a large mixing bowl, whisk together all pumpkin pie layer ingredients.
      • Pour mixture over top of cake mixture.
      • Bake for 40 minutes or until completely set. Let cool before cutting into bars.
      • Dust with powdered sugar and/or ground cinnamon, if desired.
