Roasted Salmon with a Strawberry Crème Fraîche Sauce

An easy main dish with an added special twist to brighten the day.


    For the Salmon:

  • 2 large salmon filets
  • 1 tbsp olive oil
  • Sea salt
  • 1 sprig of tarragon
  • 2 slices of lemon
  • For the Strawberry Crème Fraîche

  • 3 California Giant Berries Strawberries
  • 5 tbsp cup crème fraîche
  • Sprig of fresh tarragon leaves
  • Pinch of sea salt


      • Preheat the oven to 400F. On a payment paper lined baking tray, coat the salmon with olive oil, sea salt, lemon slices and tarragon. Cook for about 10-12 minutes, or until the salmon is tender.
      • In the meantime, make the sauce by adding all the ingredients into a blender and mix until creamy. Pour into a serving bowl. Plate the salmon and add the dressing on top. Enjoy!
