Simple Blueberry Cobb Salad

A colorful take on a classic Cobb salad – just add blueberries!

INGREDIENTS

    For the Dressing:

  • ¼ cup olive oil
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons lemon juice or apple cider vinegar
  • 1 tablespoon Dijon mustard
  • splash of water
  • For the Salad:

  • 3 cups romaine lettuce, roughly chopped
  • ½ cup California Giant blueberries
  • ¾ cup cherry tomatoes
  • 2 hard boiled eggs, cut into quarters
  • ½ large avocado, thinly sliced
  • 1 cup cooked chicken, cut into bite size pieces

DIRECTIONS

      • Add all the dressing ingredients into a small mixing bowl and whisk till combined. Set aside
      • Add the lettuce into a mixing bowl and top with a few spoonfuls of the dressing. Mix well. Now pour the salad onto a serving dish (or divid into bowls) and top/line with the salad remaining ingredients (as seen in the photo). Finish off with a drizzle more of the dressing and enjoy!
