A colorful take on a classic Cobb salad – just add blueberries!
For the Dressing:
¼ cup olive oil
3 tablespoons honey or maple syrup
2 tablespoons lemon juice or apple cider vinegar
1 tablespoon Dijon mustard
splash of water
For the Salad:
3 cups romaine lettuce, roughly chopped
½ cup California Giant blueberries
¾ cup cherry tomatoes
2 hard boiled eggs, cut into quarters
½ large avocado, thinly sliced
1 cup cooked chicken, cut into bite size pieces
Add all the dressing ingredients into a small mixing bowl and whisk till combined. Set aside
Add the lettuce into a mixing bowl and top with a few spoonfuls of the dressing. Mix well. Now pour the salad onto a serving dish (or divid into bowls) and top/line with the salad remaining ingredients (as seen in the photo). Finish off with a drizzle more of the dressing and enjoy!
