These Simple Strawberry Sandwiches are a light and sweet treat.

INGREDIENTS

  • 8 ounces Neufchatel cheese or low-fat cream cheese, softened
  • 1 tablespoon honey
  • 1 teaspoon grated lemon zest
  • 8 baguette slices, toasted
  • 2 cups (about 10 ounces) California Giant strawberries, stemmed and sliced

DIRECTIONS

      • In food processor or bowl, mix cheese, honey and zest until well mixed.
      • Spread 1 tablespoon cheese mixture on baguette slice; top with ¼ cup strawberries.
      • Repeat with remaining ingredients to make 8 open-faced sandwiches.
