Smoky fish tacos refreshed with a berry celery salsa.
INGREDIENTS
For the Tacos:
4 tortillas
4 ounce package of hard-smoked salmon or white fish
1 avocado, cut into thin strips
For the Salsa:
1 cup lettuce, shredded
¼ cup California Giant bllueberries, cut in fourths
⅓ cup California Giant strawberries, diced
½ stick celery, diced
½ carrot, diced
1 tablespoon sour cream or vegan sour cream
Squeeze of lemon juice
drizzle of olive oil
sea salt
DIRECTIONS
To make the salsa, mix all the ingredients into a bowl until well combined.
To assemble the tacos, start by warming the tortillas on the stove top on both sides. Then add in a few slices of avocado, the smoked fish and a generous spoonful of the salsa. Enjoy!
