This recipe hack for Strawberry Filled Healthy Twix Bars is easy to makes for an unbelievably delicious, dairy-free and gluten-free treat.

INGREDIENTS

    For the Cookie Layer:

  • 1¼ cup almond flour
  • 2 tablespoons coconut oil
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • For the Caramel-Raspberry Layer:

  • 12 Medjool dates, pitted
  • ½ cup creamy peanut, cashew or almond butter
  • 1 cup California Giant strawberries
  • For the Chocolate Layer:

  • 1½ cups chocolate chips
  • Pinch of sea salt

DIRECTIONS

      • Start by preheating the oven to 350F and line an 8” baking dish with parchment paper.
      • To make the cookie layer, simply mix all the ingredients together in a bowl. The mixture will be slightly sticky.
      • Press the cookie dough into the baking dish, creating an even and smooth layer.
      • Pop into the oven and cook for 10 minutes. Take out and let cool.
      • For the caramel layer, simply add all the ingredients into a food processor and blend until creamy.
      • Add the caramel on top of the cookie dough layer and press down - spreading the mixture evenly on top.
      • Pop the mixture into the freezer to set for 30 minutes while you make the melted chocolate.
      • Melt the chocolate chips using the double boiler method. Add 1/2 cup of water into a small pot and let simmer. Now place a small mixing bowl on top of the simmering pot. Pour the chocolate chips in the warmed mixing pot over the oven, and stir until melted. Remove from heat.
      • Take the dough out of the freezer and pour the chocolate sauce on top. Sprinkle with sea salt and then pop back into the freezer to set for another 30 minutes
      • Once it is set, cut into your bars and enjoy!
