Strawberry Funfetti Cupcakes

Whatever the celebration, these Strawberry Funfetti Cupcakes are the perfect treat! The fresh strawberries add an additional touch of sweetness and color – you can’t help but smile when you take a bite!


    For the Cupcake Batter:

  • 1½ cups all-purpose flour
  • ¾ cup coconut sugar
  • ¾ cup California Giant strawberries, diced
  • 1¼ teaspoons baking powder
  • ½ cup unsalted butter or ghee, room temperature
  • 2 eggs
  • ½ cup oat or almond milk
  • ⅓ cup rainbow sprinkles
  • Sea salt
  • For the Frosting:

  • 1 cup buttercream frosting
  • Rainbow sprinkles


      • Start by preheating your oven to 350F. Make the batter by adding all the cupcake ingredients into a bowl and mix well (using a hand mixer or a fork). Evenly pour the batter into cupcake holders and pop into the oven to cook for 15-20 minutes.
      • In a separate bowl, mix the frosting with the sprinkles.
      • Once the cupcakes have cooled, top with the frosting and enjoy!
