Fuel your day with this Strawberry & Honey Lime Chicken Power Bowl! Featuring Honey Lime Chicken, fresh California Giant Strawberries, creamy avocado and crumbled feta, all drizzled with a homemade Strawberry Poppy Seed Dressing, this bowl is just as delicious as it is nourishing.

INGREDIENTS

    For the Strawberry Poppy Seed Dressing:

  • 1 cup quartered California Giant strawberries
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • ½ teaspoon fine sea salt
  • ¼ cup extra virgin olive oil
  • Pinch of ground black pepper
  • 1 tablespoon poppy seeds
  • (Yields - About 1 cup)
  • For the Honey Lime Chicken:

  • 1 pound boneless skinless chicken breasts
  • ½ teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ½ teaspoon fine sea salt
  • Zest and juice of 1 lime (about 3 tablespoons lime juice)
  • 3 tablespoons honey
  • 1 tablespoon coconut aminos (sub soy sauce, or tamari)
  • 1 tablespoon avocado oil
  • For the Salad:

  • 2 cups cooked quinoa
  • 4 cups spinach (or salad greens of your choice)
  • 6 large California Giant strawberries, sliced
  • ¼ cup sliced red onion
  • 1 small avocado, sliced
  • ½ cup crumbled feta

DIRECTIONS

  • For the Dressing:

      • In a small blender combine all ingredients except poppy seeds. Blend until smooth and taste test for desired sweetness (honey), vinegar or salt. Stir in poppy seeds.
      • Chill in fridge until ready to serve.
  • For the Chicken:

      • Preheat grill to medium-high heat.
      • In a small bowl combine garlic powder, black pepper and salt. Sprinkle on each side of chicken breast.
      • In a medium bowl whisk together lime juice, honey, coconut aminos and oil.
      • Once grill has heated, cook chicken for about 3 minutes on each side.
      • Using a basting brush, brush chicken with honey lime mixture. Grill chicken another 1-2 minutes before flipping and brushing the other side and cooking an additional 1-2 minutes, or until internal temperature has reached 165ºF. Transfer chicken to plate to rest while you prepare the power bowls.
  • For the Bowl Assembly:

      • Evenly distribute quinoa, spinach, sliced strawberries, onion, avocado, feta and grilled chicken between two bowls.
      • Drizzle with Strawberry Poppy Seed Dressing and enjoy!
