Add a taste of elegance to any occasion with this luscious Strawberry Rice Cake Tiramisu!
4 rice cakes
1 cup coffee
1½ cups plain yogurt
1 scoop vanilla protein powder
1 cup California Giant strawberries, quartered
Juice of ½ orange and zest
1 tablespoon cacao powder
Start by making the strawberry filling by adding the strawberries and orange juice into a saucepan to cook on medium-high heat for 5-8 minutes, or until the strawberries have cooked down and released their juices. Pour the sauce into a bowl and set aside.
In a mixing bowl, mix together the yogurt and vanilla protein powder. Set aside.
Pour the coffee into a dish and dip one side of the rice cake into the coffee, flip and dunk the other side.
Now add a heaping tablespoon or two of the yogurt and speed evenly on top of the coffee dipped rice cake.
Add a heaping tablespoon of the strawberry on top of the yogurt and spread evenly.
Repeat the process 3x more, and at the final layer of the tiramisu, top the yogurt with cacao powder and a few strawberry slices.
