½ cup wheat berries, soaked overnight
3 cups baby kale leaves
1 ½ cups thinly sliced cucumber
10 quartered and marinated artichokes
½ cup crumbled goat cheese
10 strawberries, thinly sliced
½ cup chopped and toasted pecans
2 T extra virgin olive oil
1 T champagne vinegar
¼ tsp kosher salt
½ tsp honey
Cover wheat berries with salted water and let gently simmer for 45 min - 1 hr or until tender, but still chewy. Can also make it in a rice cooker if you have one at home and set it to the brown rice setting. Drain remaining water and set aside.
In a small bowl, whisk together the ingredients for the vinaigrette.
In a large bowl, toss together the wheat berries, kale, cucumber, artichokes, and strawberries.
Divide among bowls and top with chopped pecans and goat cheese.
