Enjoy this healthy and easy zoodle salad with blackberries!
INGREDIENTS
2 tablespoon olive oil
4 - 6 ounces prosciutto, chopped
2 shallots, minced
4 zucchini
Grated asiago cheese
3 cups arugula
6 oz California Giant blackberries (or any berry you have on hand)
DIRECTIONS
Sautee shallots and prosciutto in olive oil, until shallots are tender and prosciutto is crispy. Remove from pan and set aside.
Using a spiralizer, spiralize zucchini into thin, spaghetti shaped noodles. Add zoodles to the same pan, and sauté until zucchini is tender (add more oil if needed).
Transfer zoodles to a serving bowl. Top with arugula, cheese, the sautéed shallots and prosciutto, and top with blackberries!
