Zoodle Salad with Blackberries

INGREDIENTS

  • 2 tablespoon olive oil
  • 4 - 6 ounces prosciutto, chopped
  • 2 shallots, minced
  • 4 zucchini
  • Grated asiago cheese
  • 3 cups arugula
  • 6 oz California Giant blackberries (or any berry you have on hand)

DIRECTIONS

      • Sautee shallots and prosciutto in olive oil, until shallots are tender and prosciutto is crispy. Remove from pan and set aside.
      • Using a spiralizer, spiralize zucchini into thin, spaghetti shaped noodles. Add zoodles to the same pan, and sauté until zucchini is tender (add more oil if needed).
      • Transfer zoodles to a serving bowl. Top with arugula, cheese, the sautéed shallots and prosciutto, and top with blackberries!
