The Upside Down Puff Pastry Croque Monsieur with Caramelized Blackberries is a savory twist on a classic French sandwich. Layers of ham, Gruyere cheese, and Dijon mustard sit atop a bed of caramelized blackberries and onions, all encased in crispy puff pastry. Once baked and flipped, the tart is garnished with fresh blackberries, chives, and a sprinkle of sea salt for a perfect balance of sweet and savory flavors.

INGREDIENTS

  • 1 Puff pastry packet, cut into 6 rectangles
  • 6 thin slices of ham
  • 6 thin slices of gruyere cheese
  • 1 tbsp dijon mustard, divided into 6
  • 3/4 cup California Giant blackberries
  • 1/3 yellow onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp butter
  • Sea salt
  • Handful chives, roughly chopped

DIRECTIONS

      • Start by preheating your oven to 350F.
      • Make the caramelized blackberries by melting the butter and oil in a medium saute pan. Add in the onions and blackberries, and on medium heat, cook for 15 minutes until tender - stir often. Once cooked, set aside.
      • On a parchment paper lined baking tray, start by assembling your tart by first layering down the caramelized blackberries and onions mixture (divided into 6 portions) and then add the slice of ham on top of that.
      • Take 1/6 portion of the dijon and rub the ham with the dijon. Now top with the cheese and add the puff pastry on top to cover - push the four edges down of the puff pastry, so that it seals in the ingredients.
      • Brush the top of the puff pastry with the egg wash. Repeat 5 more times.
      • Pop in the oven and bake for 15 minutes. Once it has cooked, wait for it to cool and then flip the tart over, adding the chives and a sprinkle of sea salt. Add a few slices of fresh blackberries to the tart and enjoy.
